Pumpkin & Mushroom Bake
Preparation Time: 25 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
1 Tbsp butter
1 onion, chopped into wedges
2 cloves garlic, crushed
1 tsp fresh thyme or 1/2 tsp dried thyme
500 g pumpkin, peeled and chopped
300 g mushrooms, cut into quarters
freshly ground black pepper
1 packet MAGGI White Sauce Mix
1/2 cup milk
1/2 cup water
1/2 cup grated parmesan cheese
Method
- Preheat oven to 180°C.
- Heat the butter in a frying pan. Add the onion and garlic and cook over medium heat for 3 minutes. Add the thyme and pumpkin and cook for a further 5 minutes.
- Add the mushrooms and pepper and continue cooking for a further 5-10 minutes.
- Place the pumpkin and mushroom mixture in a medium sized ovenproof dish.
- Combine the MAGGI White Sauce Mix, milk and water in a small pan.
- Bring to the boil stirring, and simmer for 2 minutes.
- Pour the sauce over the pumpkin mixture.
- Top with the parmesan and bake for 15 minutes or until the pumpkin is cooked.
- Place under a heated grill until golden brown (about 5 minutes) before serving.
Hints
Serve with a green salad.
