Chicken Koftas with Couscous Salad

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 4
Ingredients
500 g minced chicken
1 packet MAGGI Chicken & Herb Gravy Mix
1 tsp grated fresh root ginger
1 tsp finely grated orange rind
2 Tbsp orange juice
1 Tbsp honey
2 Tbsp red wine vinegar
1 Tbsp whole seed mustard
1 cup dried breadcrumbs

COUSCOUS SALAD
2 cups water
2 tsp MAGGI Vegetable Stock Powder
1 1/2 cups couscous
1/4 cup black olives
2 small courgettes, cut into strips
1/4 cup toasted flaked almonds
4 Tbsp Olive oil
1 Tbsp lemon juice
rind of 1 lemon
1 Tbsp chopped fresh coriander
1 Tbsp chopped fresh parsley
pinch of ground cumin
pinch of cayenne pepper
salt and freshly ground black pepper to taste
Method
- Combine all ingredients in a bowl. Refrigerate 15 minutes. With wet hands, mould chicken mixture around 8 skewers. Place under preheated grill, for 6 minutes or until cooked through, turning once.
2. To make Couscous Salad; in a saucepan bring water and stock powder to the boil. Remove from heat and stir in couscous. Cover and leave for 2 - 3 minutes. Fluff up with a fork.
- Stir in olives, courgettes and almonds. Combine remaining ingredients and stir into the salad.
- Serve Koftas with Couscous Salad and extra steamed cougettes on the side
