Cajun Chicken with Corn Salsa

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Serves: 4
Ingredients
500 g skinless chicken breast fillet, sliced
2 Tbsp oil
1 packet MAGGI VEGETABLE SENSATIONS Cajun Wedges
SALSA
1 cup whole corn kernels
1 red onion, chopped
3 tomatoes, diced
2 Tbsp chopped fresh parsley
1 tsp MAGGI Garlic Stock Powder
Juice and zest of 1 lime
salad leaves to serve
sour cream to serve
Method
- Combine chicken and oil. Toss with packet mix.
- Heat a large frying pan or wok. Add chicken and stir fry over high heat for 5 minutes, or until cooked through.
- To make salsa; combine all ingredients in a bowl.
- To serve: place Cajun chicken on salad leaves, top with salsa and sour cream.
