Chocolate Snowflake Cookies
Ingredients
75 g butter, cut into cubes
200 g NESTLE Cooking Chocolate Block, broken into pieces
1 cup sugar
2 eggs
2 tsp vanilla essence
1 1/4 cups flour
2 Tbsp NESTLE Baking Cocoa
1/2 tsp baking powder
3/4 cup icing sugar
Method
1. Preheat oven to 160oC.
2. Place butter and chocolate in a saucepan. Cook over a very low heat, stirring until chocolate melts. Remove from heat.
3. Beat in sugar, add eggs one at a time, beating well after each addition. Stir in vanilla essence.
4. Sift in flour, cocoa and baking powder together, and gradually stir into mixture. Mix thouroughly. Cover with cling wrap, chill for 30 minutes.
5. Sift icing sugar onto a shallow plate. Roll heaped tablespoons of dough into balls, then roll in icing sugar, coating completely. Place on lined baking trays, allowing room to spread.
6. Bake in a preheated oven for 18-20 minutes or until cookies are firm on the outside but still soft in the centre. Leave on a tray for 5 minutes, then transfer onto a cooling rack.
7. Store in an airtight container.
